Summer is a grand ole time and I never tire of finding new ways of avoiding heating the kitchen. Sometimes, I’ll be honest, that means not cooking altogether. But other times it’s just about finding recipes that don’t require heat. This one fits the bill.
There’s nothing like a cold pasta salad on a hot summer day. But, as much as I love mayonnaise mixed into regular old tuna fish or hard boiled eggs I really rebel against it when it’s mixed with pasta. It just doesn’t work for me so I tend not to make many cold pasta salads.
I’ve made spinach pesto for you before. So, this recipe may seem oddly redundant, but changing the cheese changes so much that this version has a flavor all of it’s own that is distinctly different from the original.
I know, I know, you must be thinking, “quiche again?” I’ve only given you about six different kinds by now… but… would you buy that this one’s different? Look, if you run with it, I promise to lay off with the quiches for a while… promise.
