So, here it is… The Boy turned 4 years old last week and he asked for a cake shaped like a dinosaur, wearing a party hat, holding a balloon. I’m just enough of a sucker that I had to make it for him. Even though we were away and I was going to have to figure out how to make this in someone else’s kitchen, I went for it anyway.
Serious thanks have to go out to my mother for ordering all the supplies on Amazon and having them shipped to her her house since I couldn’t possibly have carried the pans, food dye, cake boards, piping tips, and pastry bags with me on the plane. But, she’d be the first to admit that she’s not a baker so the “support supplies” I’m used to having around, like cooling racks, my electric mixer, rubber spatulas etc. were not available to me. Oh, but I managed and it took only seven hours to make!
I baked the cakes on Sunday and put on the crumb coat. Then, Monday morning after breakfast I started frosting the cake and finished about 20 minutes before we served it after lunch. It wasn’t the prettiest it could have been, but all things considered it was pretty great. The Boy loved it. Frankly, so did everyone else and no one seemed to notice that it was gluten free. It certainly didn’t stop anyone from eating multiple pieces, that’s for sure!
