This meal turned out to be so good that while I was eating it I was already planning how and when to make it again.
It was fast and easy to make too. The longest part of the meal preparation was cooking the brown rice. The chicken comes together in one pan so there is very little clean up, another plus!
The onions and paprika are sweet but when you add in the broth, sour cream, and tomato paste the sweetness mellows and the dish gets rich and creamy. Something interesting happens with the taste because it almost, almost, tastes like there’s a tiny bit of peanut butter in it. Which of course made me fall in love with it instantly.
