This is another swordfish marinade recipe. I’m not sure what exactly to say about it because I’ve already waxed on about the deliciousness of swordfish very recently and I don’t want to bore anyone. But, I will say that if you haven’t had swordfish in a while, as I hadn’t, each new encounter is something of a revelation. They are meaty and filling and so satisfying. I mean, once I think about, I know why they call them steaks. This makes them a near perfect “diet” food because you can eat low calorie and low fat with them but still feel as though you are being indulged.
This recipe is also fromĀ The alli Diet Plan book. It’s quite good, and I recommend it (obviously, since I’m posting it here) but I think the next time I make it I’ll marinate the swordfish longer. The recipe calls for the steaks to marinate for only an hour. I didn’t think it was long enough because the flavor was a bit faint. Next time I’ll leave it to soak all day and then the flavors of the onion and citrus and honey will pop a bit more.
Hey, E — You might also try making a few holes in the fish w/ a fork before marinating it. I find dense fish and steaks often need this to really soak in a marinade… and you’re right, longer in the marinade is always better! *HUGS*
