Brown Rice with Broccoli

Of course, while I’ve been doing all this Alli dieting I haven’t been forcing the rest of my family to comply (although as always, my husband has been game for it all). So, I’m still cooking kid friendly food without worrying about the fat and calories because that’s one of the luxuries of being 3 and 6 years old! But, I do try to keep them eating healthy foods and I like to find ways to acclimate their palates to the taste of vegetables. Many years ago I discovered that adding some butter and Parmesan to brown rice transformed the virtuous grain into a decadent treat. What better vehicle for tricking kids to eating their vegetables?

In addition to being super kid friendly this side dish is super easy to make. It’s almost literally no harder than boiling water as the rice is the only thing that actually gets cooked in this dish.

But the broccoli is verdant and has a bright flavor that offsets the heaviness of the butter and cheese while the rice gives the dish a nutty background and a heft that will really fill you up. It’s been a complete meal for my kids that I for one feel good about them eating.

Brown Rice with Broccoli


  • 2 cups cooked brown rice
  • 1 package frozen chopped broccoli florets, 7 oz
  • 2 tbsp butter or margarine
  • 1/3 cup Parmesan cheese


  • Prepare the rice according to the package directions. Usually, the ratio is 3/4 cup rice to 2 1/4 cup water, simmered covered for 40-45 minutes.
  • Defrost the broccoli and then chop in a food processor.
  • When the rice is cooked add in the margarine or butter and stir to melt it and combine.
  • Add in the broccoli and stir to combine.
