Previously, on “Foodie, Formerly Fat”… I was discussing the end of this summer’s love affair between peaches and me. After the brilliance of the frozen yogurt I was down to the two final peaches waving to me from the peach bowl. Not enough to make much I thought and I was sorely tempted just to eat them for lunch but I held off, knowing, that I didn’t want to cheat my husband out of the last of summer’s blazing glory.
I wanted to send these last two peaches off with a bang so I made them into a delectable dessert. But, it turns out it is so low in calorie and fat that you can, in all seriousness, turn it into a breakfast without feeling any guilt at all. I mean really. The recipe makes two servings and each one has only 85 calories and 4 grams of fat. To taste it though, you’d never know. The peaches are rich and sweet and melt in your mouth good. The nutmeg and salt give the fruit just the right contrast of flavor and served over some non-fat plain Greek yogurt it was simple perfection. If you’ve still got peaches where you are it’s a must make recipe. If not, like me, start counting the days ’til next summer.
