I’ll be honest, I have no idea what a cobbler really is. It seems that there are a whole bunch of similar types of desserts called cobblers, buckles, brown Bettys, crumbles, crisps, and grunts. The common thread seems to be some sort of cake bottom, fruit middle, and crumble topping. I made my own out of nothing but my standard vanilla cake, fruit, and streusel topping.
I was undecided on what type of homemade ice cream to serve with it so I let people choose. Of the four slices I served one had peach ice cream, one had blueberry ice cream, one had vanilla ice cream, and one had lemon ice cream (yes, all homemade, I am a saint or something). Each person seemed to think his version had to be the best… of course, none of us was willing to share with anyone else so the only way to test this is to just eat a lot of it!
But really, the best part was when we had it for breakfast the next morning with plain yogurt on top. Perfect breakfast. What? It’s fruit! That makes it breakfast!
