Ice Cream: Layer “Cake”

So, I was lying on the beach fantasizing about ice cream. Specifically the strawberry ice cream I made a while back. My mind was lingering over the gorgeous peaches and blueberries I’ve been getting from the farmer’s market all summer. It dawned on me that I could use the same exact strawberry ice cream recipe but swap in peaches or blueberries and get just as good of a result. I was right.

But I decided that as good as these varieties of ice cream are, it would be even better to put them all together. Some folks who’ve tried this love it and others (cough, Adam, cough) like them better separate. I like the combination, especially in the order they are layered in: strawberry, lime, peach, blueberry. The flavors blend together perfectly.

Ice Cream Layer “Cake”


  • 1 1/2 cups each strawberry, lime, peach, and blueberry ice cream


  • Line a loaf pan with parchment paper.
  • Allow the ice cream to soften so it can be spread.
  • Gently spread the ice cream into layers (if it’s freshly made you may have to freeze it in between adding layers).
  • Allow it to freeze solid.
  • To serve, remove it from the pan and slice it vertically.
