Summer is a grand ole time and I never tire of finding new ways of avoiding heating the kitchen. Sometimes, I’ll be honest, that means not cooking altogether. But other times it’s just about finding recipes that don’t require heat. This one fits the bill.
What really makes this salad special is the herb mayonnaise. There’s just such a delightful brightness in it from the parsley, basil, and lemon juice that elevates the whole dish in an unexpected way.
The artichoke, olive, roasted red pepper, and tuna is a no brainer combination. Adding in the herb mayonnaise makes it become something really special. I served it on it’s own and it was a hit and then all night I kept fantasizing about making sandwiches with the leftovers… which, I did the next day!
