Spring has sprung, school is winding down, and life has become mind boggling chaotic. There is something wrong in my world when I look ahead at the next two months and realize I don’t have a single weekend free and unscheduled until after the middle/end of July!
The sad result is that I’m going to be pulling back on the blog just a tiny tiny bit. But, considering none of my food blogging heroes (other than Susan of course) blog everyday, or 5 days a week as I have been since the start, I’ll let myself off the hook.
The truth is that my original plan when I started the blog back in December was to do two weeks of posting 5 days a week and then drop down to three days per week. Here I am entering month six and I’m only now starting to implement my plan. Seems I’ve been on a roll.
But, just to keep people interested I’m going to throw in a day here and there with some tips on how to eat well without cooking. So here’s one for you…
I had one of the most glorious meals last week with my lovely friend Amy. We took a long long walk and at the end of it wound up seated on a small stone wall over looking a narrow river eating a picnic lunch. It was divine not only in terms of scenery and companionship but also the lunch we ate… and we barely cooked a thing!
Amy quickly sauteed some broccollini in some olive oil with garlic and that was the centerpiece of the meal. It was surrounded by organic strawberries, Dubliner’s cheese, flat bread crackers, organic baby carrots with ginger dipping sauce, cut up watermelon, pineapple, and grapes, pumpkin seeds with tamari, and a shared granola bar for dessert. With the Thermoses of water we brought with us as our drinks the meal couldn’t have been tastier.
Food that’s great for you doesn’t have to be hard.
I’ve had similar thoughts of slowing it down a bit. I never thought I could keep it up every day anyway. It’s good not to overdo. It will just leave the people wanting more and we’ll all be that much more excited when you post!
