According to Adam and my friend Susan, radishes get a bad rap. Most people think of them as a garnish that doesn’t get eaten. In fact, Susan had a post a while back on her blog for some radish tea sandwiches that are really good.
But, as usual, I wanted a quicker and easier way so I thought, what if I throw a whole bunch of yummy stuff into the food processor and then slather it onto bread. I mean, who doesn’t think that’s going to turn out well? Lucky for me it did, and it got the thumbs up from Adam to boot!
Radish Butter
8 medium radishes
1 stick unsalted butter
1 tsp kosher salt
3 grinds fresh black pepper
7 springs fresh parsley
2 scallions
Put all the ingredients together in the work bowl of a food processor and let it run until it’s smooth.
Spoon the mixture into ramekins and press on the top gently with a paper towel to absorb the excess water that comes out of the radishes when they are minced.
Spread on slices of baguette and eat. Yum!
I had some of Elizabeth’s radish butter and spread it on a baguette (just like the photo). I love the buttery flavor combined with the scallions and zip & crunch of the radishes. Yeah, we’re bringing back the radish!!
